Haints and Sinners

I started working on Haints and Sinners back in February 2021. Haint Blue is a color derived from indigo cultivated and crafted primarily by Gullah Geechee descendants of indigo farmers in West Africa. The color emulates nature; we paint ceilings, shutters and porches haint blue as protection from haints themselves—ghosts and malevolent spirits—whose attacks are thwarted by sky and ocean. Pine and peach from Georgia and the Carolinas, and a cousin in Uncle Nearest whiskey, make for a tasty replica of Southern skies.

Makes 1 cocktail

1½ ounces Uncle Nearest 1884 Premium Whiskey
¾ ounces Zirbenz pine liqueur
½ ounce blue curaçao
½ ounce cream
½ ounce fresh lemon juice
3 dashes peach bitters
3 drops liquid chlorophyll (I buy it from Whole Foods or a local apothecary; cannot be substituted for powdered chlorophyll in capsule form)

Chill a Nick and Nora glass. Build all ingredients in a cocktail shaker. Fill the shaker with ice and shake well, about 15 seconds. Double strain into the chilled glass.
