EGG MUFFINS

These muffins are easy to make and super-yummy. Make them a day ahead for an instant breakfast or snack. Makes approximately 12 muffins.
1 tablespoon olive oil
1 sweet onion, chopped
1 sweet red pepper, chopped
½ pound ground turkey or pork sausage
Cayenne pepper, to taste
12 eggs
½ teaspoon each sea salt and pepper 1 cup spinach, chopped Preheat oven to 350 degrees.
Heat olive oil in a skillet over medium heat and sauté onions and peppers for 10 minutes. Add sausage and cayenne and cook until sausage is no longer pink. Remove from heat and allow to cool.
In a mixing bowl, whisk 12 eggs with salt and pepper. Add spinach and combine. Pour meat mixture into egg mixture and combine thoroughly. Spoon mixture into greased muffin tins.
Bake for 20–25 minutes or until a knife inserted in the center comes out clean.
